Swaying in the breeze, the leaves of the sugar maple recall the amber tones of its best-known product (Acer saccharum): maple syrup. Discovered by the aboriginal peoples of eastern North America, the region of the world where the sugar maple has its limited range, maple syrup is a precious commodity for which Canada is the world's largest supplier. Historically, the practice of tapping sugar maples and boiling the sap to produce a thick, sweet syrup was taught to French settlers by the First Nations hundreds of years ago, in what is now Quebec, Ontario and New England. The product quickly became a sensation in both the Old and New Worlds, as the sugaring season allowed settlers to preserve this uniquely sweet food in liquid or solid form for shipment to Europe. Today, the vast majority of the world's supply of maple syrup - around 80% - comes from Canada, with over 90% from Quebec. Most of this sweet, golden Canadian elixir is exported, mainly to the United States.Packaging
