Production technique: Two blanks are cut, shaped and then hollowed out to give the curved appearance typical of macaroon cookies. A third blank is cut and hollowed out, creating the appearance of a crown. Its edges are then crushed with a tool to reproduce the rounded appearance of the macaron ganache. This same blank is then struck to create the grooves used to set the two curved blanks.
